If you need an easy side dish recipe, you’ve found one that is not only simple, but comforting and delicious! This Easy Green Chili Rice Casserole recipe is as simple as mixing up all the ingredients — cooked rice, shredded cheese, sour cream, and green chiles — in a bowl and baking in a casserole dish. It’s a great side dish for weeknight meals with just about any main dish meat, but we especially like it when served with chicken.

If you are new to cooking with green chiles and wondering how spicy are canned green chilies, we can tell you that they are usually very mild without much, if any heat. We have used diced mild green chiles in our recipes for years and even our children that don’t like spicy foods can handle them without any issues. The brands we have used the most are Ortega or store brand generic, but our favorite are Macayo Diced Green Chiles (7 ounce can), which we’ve bought at Costco. They may be a regional item, so your mileage may vary on if you can find these in your area.

A word about draining your green chiles: we have found that canned green chiles vary greatly in how they are packed. Some are packed in a thin, transparent water. Others, like the Macayo brand we prefer, are packed in a type of green chile sauce (not transparent, like water). If yours appear packed in water, we recommend draining off most of the water before using in this recipe. If the green chiles you bought have more of a sauce with them, we recommend using the entire can without draining.

To make this Easy Green Chili Rice Casserole, you will simply mix all of the ingredients in a medium-sized mixing bowl. The ingredients are then placed in a greased 2-quart baking dish and topped with a bit more cheese. All this is baked in the oven until hot, the cheese is melted and beginning to brown.

Once it’s done, it’s ready to serve! Easy enough for a weeknight dinner, but also great for Sunday supper too!

TIP: If you like, this recipe can easily become a main dish by adding some cooked and diced chicken breast.

    3 cups cooked white rice

    78 ounces diced mild green chiles (either two 4 ounce cans or one 7 ounce can – depending on what’s available in your store; mostly drained if packed in water – see note below)

    8 ounces cheddar cheese, shredded and divided

    16 ounce container sour cream

    Instructions

    Preheat the oven to 350 degrees F. Grease a 2-quart casserole baking dish (we use cooking spray).

    Combine all ingredients, except about 1/2 cup of cheese, together in a large bowl. Spread the mixture into prepared dish. Sprinkle remaining cheese on top of mixture. Place in oven and bake for about 35 minutes and the cheese has melted and begun tobrown.

    Notes

    –If your green chilies appear packed in a water (thin, almost transparent), we recommend draining off most of the water. If your green chiles have more of a green chile looking sauce (thicker than water, not transparent), we recommend using the entire can without draining.

      Tasty. I halved the recipe for the two of us and baked 25 minutes in 1 quart caserole dish. It’s also good served at room temperature. Nice change to serve instead of potatoes.
